Course Spotlight: Food Preparation

Discover Food Preparation

Whether you’re cooking for yourself, planning a dinner party, or just curious about catering, a sound foundation in food preparation can make every meal more rewarding.

Our Food Preparation course takes you through the essentials, from kitchen basics to menu planning for gatherings and events. You’ll explore a wide range of ingredients and cooking methods, building your knowledge lesson by lesson. Discover how to turn fresh ingredients into memorable meals.

Start with the Essentials

The course begins by building a strong foundation for everything that follows. Understanding the principles behind cooking helps you make sense of different techniques, while familiarity with kitchen terminology and measurements makes recipes easier to follow and adapt. You’ll also explore how food, nutrition and the wider catering industry fit together – giving you useful context for developing your skills and making informed choices in the kitchen.

From there, you’ll explore some of the ingredients that appear in everyday meals. With fruit and vegetables, you’ll learn about choosing ingredients, basic preparation, and cooking techniques. The course also considers how preparation and cooking can affect nutritional value, and why fruit and vegetables form an important part of a balanced diet.

Get to Know Everyday Ingredients

Cereals, starches, bread and potatoes offer plenty of room to experiment. You’ll cover different potato dishes, cook rice, couscous and pasta, and discover how to make fresh pasta. Along the way, you’ll consider how these foods contribute to a diet and how preparation choices can affect their nutritional value.

The course then turns to meat, fish and alternatives. You’ll learn about selecting cuts, basic butchery and fish preparation, and ways to prepare and cook different ingredients. You’ll also explore complementary sauces, different ways to cook eggs and how to use pulses – alongside nutrition related to this food group.

Milk and dairy provide another opportunity to broaden your kitchen skills. The lessons introduce cheese types and basic cheese-making, as well as recipes such as macaroni cheese. You’ll also explore yoghurt, including how to make it and use it in sauces, and consider dairy-free cooking.

Build Skills in Flavour and Balance

Fats and sugars are part of many recipes, especially puddings, but learning how to work with them gives you more flexibility. You’ll look at different types of fat, explore pudding-making and consider how recipes can be adapted for lower-fat or lower-sugar dietary requirements.

Then comes the art of flavouring food. Herbs and seasoning, stocks and sauces can help bring a dish together or transform simple ingredients into something special. You’ll consider flavour pairings and sauces made with ingredients such as cream, wine, butter and vinaigrette. The aim is to help you think about how flavours work together – not to simply follow a recipe step by step.

Plan Meals, Menus and Occasions

Once you’ve explored the ingredients and techniques, you can put them into practice through menu planning. For smaller occasions, you’ll consider how to create a menu with dishes that complement one another, make use of seasonal foods, and suit the occasion. A dinner-party case study offers a practical way to bring those decisions together.

The course also looks at catering on a larger scale. Planning meals for parties and events means thinking about more than individual recipes; the setting, the style of service, and the needs of the occasion all matter. You’ll explore catering for indoor and outdoor events and look at restaurant menus, too.

Taking Things Further

Whether you’re developing confidence in the kitchen or expanding your understanding of food and catering, Food Preparation offers a structured way to explore ingredients, techniques and planning. You’ll move from the fundamentals towards creating dishes and menus with more purpose – and a clearer sense of what makes them work.
